Tasting Notes
120 Merlot is a wine of violet red color, with intense fruity aromas reminiscent of red fruits, as well as floral notes, vanilla and tobacco. It is a wine of great volume and elegance, with a good balance between a suitable acidity and ripe tannins, which develop throughout the mouth, with a refreshing fruity finish.
Vinification
Manual harvesting during the month of April. The grapes are destemmed, gently crushed, subjected to fermentation at temperatures between 24 and 26 °C. Depending on each batch and zone, 10% wood was used in the fermentation to increase the color fixation and stability of the wines. Once the alcoholic fermentation was finished, 20% of the wine went through a period of aging in French wood for 6 to 8 months, according to the year, to increase sweetness and complexity. This wine has storage potential of 3 to 5 years.
